Cherry Galette A rustic French dessert that has all the yummy flavor of a cherry pie but with much less work. A galette is essentially an easy French pie; it doesn’t have the sides all sealed with dough as a pie has; instead, the dough just folds over the sides of the fruit mixture to create a rustic, free-form pie. This will taste heavenly with vanilla ice cream and is simple to make for summer, or for any day really.
Ingredients
For the Crust
- 1½ cups all-purpose flour
- 2 tablespoons granulated sugar
- ½ teaspoon salt
- ½ cup cold unsalted butter, cubed
- 4–5 tablespoons ice water
For the Cherry Filling
- 4 cups fresh cherries, pitted
- ⅓ cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
For Topping
- 1 egg, beaten (for egg wash)
- 1 tablespoon coarse sugar
Instructions
Combine the flour, sugar, and salt in a bowl. Add the cold butter and chop until coarse crumbs are formed.
Gradually add ice water and stir until a dough is formed. After wrapping, chill for half an hour.
Line a baking sheet with parchment paper and preheat the oven to 400°F (200°C).
In a dish, mix together cherries, sugar, cornstarch, lemon juice, and vanilla essence.
Place the refrigerated dough on the baking sheet after rolling it into a circle. Leaving a border around the edges, place the cherry filling in the middle.
To make a rustic crust, fold the edges of the dough over the cherries.
After brushing the crust with egg wash, dust it with coarse sugar.
Bake for 35 to 45 minutes, or until the filling is bubbling and the crust is brown.
